Citrus Kale Salad

10 cups kale, chopped or torn
¼ cup sunflower seeds, toasted
¼ cup red onion, chopped
1 tsp fresh ginger
1 whole avocado, chopped
½ cup quinoa, cooked
2 tbsp lemon juice
1 tbsp lime juice
2 tbsp extra virgin olive oil (EVOO)
Sea salt

Pour the lemon juice, lime juice and EVOO onto the chopped kale. Massage kale with hands to soften leaves.  Add remaining ingredients and mix well.  Serves 2-4 people.
